A Great Lenten Meal: Angel Hair With Lemon and Creamy Spinach

Are you looking for a easy but different meatless meal for Lent? I wanted to share this delicious and light dinner that we had this week. Our whole house loved it!

Angel Hair with Lemon and Creamy Spinach

1 package angel hair pasta
2 1/4 cups plain yogurt
1 1/2 Tbsp. flour
1 1/2 Tbsp. olive oil
3 tsp. minced garlic
3/4 tsp. crushed red pepper
4 1/2 cups fresh baby spinach
6 Tbsp. lemon juice
salt and pepper to taste
1/3 cup Parmesan cheese, grated

Cook pasta according to directions. Drain and return to pot.
Meanwhile, in a bowl, whisk yogurt and flour until smooth.
Heat oil in large skillet over medium low. Add garlic and red pepper flakes and cook until fragrant, about 2 minutes. Add yogurt mixture and bring to a simmer over medium heat.
Add spinach by the handful, stirring; continue to add more as the spinach in the pan becomes wilted. When all of the spinach has been added, add lemon juice and lemon zest to taste. Season with salt and pepper.
Add sauce to angel hair and gently toss to coat. Serve pasta generously sprinkled with Parmesan.
